Saffire Freycinet

Saffire Freycinet is a coastal sanctuary capturing the essence of Tasmania’s most sublime coastal region, the Freycinet Peninsula.

The 20-suite retreat is located on the inside of a gentle curve of sandy coastline that joins the peninsula to mainland Tasmania. Distinct in its design and exclusive in its features, Saffire takes its inspiration from the colours of the peninsula – the pink granite of the Hazards Mountains, the white sandy beaches, the sapphire-blue waters and the grey-green of the native bushland. Panoramic windows showcase views of Great Oyster Bay where migrating whales and dolphins come to play.

Guests are accommodated in luxuriously appointed suites designed to maintain utmost privacy while taking in the views and natural light. Finishes are of the highest quality while furnishings blend the classic and the contemporary.

Boutique in size and approach, the retreat is dedicated to one-on-one service and personally tailored experiences. Included in the Saffire tariff is a broad range of activities to suit all interests, inclinations and fitness levels.

The retreat also has a range of facilities for relaxation and restoration, including the spacious Lounge (complete with library), Spa Saffire and, serving all the flavours of the region, the exclusive restaurant, Palate.

East Coast

The East Coast is famous for aqua seas, and deserted shell-strewn beaches that stretch for kilometres. House-sized granite boulders reddened by lichens are polished smooth by waves that thump and sigh as they crumple onto the shore. Just before the small fishing town of Bicheno, is the Douglas-Apsley National Park, a landscape of rugged river gorges, waterfalls and gently flowing rivers. Nearby is spectacular Freycinet National Park, with Coles Bay at its entrance overlooking crystal-clear Oyster Bay, an ideal place for diving, snorkelling, kayaking, boating and fishing. The park is dominated by the pink granite of the Hazards Mountains and best known for the perfect curve of Wineglass Bay.
The produce of the region is legendary: expect the best in oysters, walnuts, olives and, of course, fresh fish.

City – Equidistance between Hobart and Launceston

Air access
Charter flight from Hobart to Saffire takes approximately 25 minutes or helicopter transfer from Hobart takes approximately 40 minutes.

Road access
Saffire is located 195km (approximately three hours drive) from Hobart or 2.5 hours from Launceston.

Experience the contrast between wetland ecology and the marine life of the Tasman Sea on a Quad Bike excursion like no other. Your guide will lead you to the crystal white sands of Southern Friendly Beaches where you will enjoy a light refreshment before returning to Saffire through the magnificent forest of Freycinet National Park.

Slip on your waders and expect the unexpected as you journey into the secret life of oysters and mussels at Freycinet Marine Farm. Growing the finest Angasi and Pacific oysters for the Saffire tables, this farm is also situated in the RAMSAR listed Moulting Lagoon, an internationally significant area visited by thousands of migratory birds from all over the world.

Regularly listed as one of the most beautiful beaches in the world, Wineglass Bay is a must-see for anyone visiting Freycinet. A range of walks are available ranging from 40 minutes to three hours.

Saffire’s restaurant, Palate, prides itself on showcasing the best Tasmania has to offer, and provides tailor-made experiences to suit all guests. From early morning to late evening, the kitchen works to serve the true flavours of home-grown produce. The Palate restaurant specialises in tailoring dining to all guests’ requirements.

Multi-course degustation menus matched with outstanding local wines are a speciality, with menus designed around what is fresh out of the water or the paddock on any given day. If you prefer, you can consult the chef for a masterful interpretation of your favourite dish made from the finest local ingredients, or choose from the à la carte menu.

Saffire Freycinet is open all year round. The east coast of Tasmania is relatively milder than in other regions of the island state. Peak season for visitors to the state is between September to May.
